Situata nella Conca d’Oro a Panzano in Chianti, Carob-
bio si estende per circa cinquanta ettari complessivi,
tra antichi vigneti, olivi e boschi rigogliosi. L’esposi-
zione ottimale, l’altitudine e la tipologia dei suoli fan-
no di quest’azienda un luogo perfetto dove coltivare e
trasformare meravigliose uve di cui il Sangiovese è il
re incontrastato. Grazie alle cure della famiglia Nova-
rese e al lavoro quotidiano dell’enologo Dario Faccin
e del suo team affiatato, Carobbio esprime oggi ap-
pieno la sua straordinaria vocazione con la pregiata
collezione dei suoi vini e il suo fragrante olio d’oliva.

Located in the Conca d’Oro of Panzano in Chian-
ti, Carobbio covers a total of fifty hectares with an-
cient vineyards, olive groves, and lush woodlands.
The excellent position, altitude and type of soil make
this vineyard the perfect place for growing and tran-
sforming marvelous grapes, of which Sangiovese is
the undisputed king. Thanks to the supervision of
the Novarese family and the daily work of enologist
Dario Faccini and his close-knit team, Carrobbio ful-
ly expresses its extraordinary vocation through its
prestigious collection of wines and fragrant olive oil.

il Sangiovese (95%) e il Merlot (5%). Affinato in botti
grandi per 12-14 mesi, grazie all’ottima bevibilità e
agli intensi sentori di frutti rossi, questo vino esprime
al meglio le peculiarità di un territorio unico. Adat-
to ad ogni stagione e ottimo in abbinamento a primi
piatti, salumi e carni arrosto.

Chianti Classico Carobbio is an extremely elegant
and refined wine made from a blend of two marve-
lous grape varieties: Sangiovese (95%) and Merlot
(5%). It is aged in large barrels for 12-14 months. Due
to its excellent drinkability and intense overtones of
red fruits, this wine expresses the best characteristics
of this unique territory. Perfect in any season, it is
excellent served with first course dishes, salamis and
roast meats.

to. Spicca per personalità, ampiezza, note fruttate e
speziate piacevoli e ben integrate. Corpo, tannini e
struttura armonica lo votano all’accompagnamento di
carni arrosto o alla brace e formaggi stagionati.

Chianti Classico Riserva Carobbio is the result of a
precise, scrupulous selection of our best Sangiovese
grapes. Aged for 18 months in French oak barriques,
it is a well-balanced, robust wine. It stands out for its
personality, depth, and its pleasant and well integra-
ted fruity and spicy notes. Due to its body, tannins,
and harmonious structure, it is ideal served with roa-
sted or grilled meats and aged cheese.

attenta. Affinato in barriques per 22 mesi e succes-
sivamente in bottiglia per altri 7-8 mesi. Questo vino
profondo, con eleganti aromi di ribes nero e cedro,
è ottimo in abbinamento a carni stufate e formaggi
stagionati.

This Cabernet Sauvignon is renowned for its full-bo-
died flavor. Its grapes, which come from the mature
vines of the Pesa vineyard, are the result of a care-
ful limited production. It is aged in barriques for 22
months and then in bottles for 7-8 more months. This
profound wine with elegant aromas of black currants
and citron is excellent served with braised meats and
aged cheese.

This refined, full-bodied, pure Sangiovese is solely
made from grapes of the Vascone Vineyard. It is aged
in French oak barriques for 18-20 months and then
in bottles for at least 6 months. A wine of this textu-
re and structure acquires adequate elegance through
its aroma and flavor. It is excellent served with white
and red meats, soups, and cheese.

prezzare per la sua grande piacevolezza. Risulta ele-
gante ed avvolgente al palato. Ottimo in abbinamento
alle tipiche “merende toscane”.

Obtained through the soft pressing of whole Sangio-
vese grapes, Terra Rossa Rosato Carobbio is a mo-
dern wine with great olfactive impact. Rich in tropical
overtones combined with notes of wild strawberries, it
is much appreciated for its delightful taste that ele-
gantly caresses the palate. This wine is excellent ser-
ved with typical Tuscan snacks.

ne nel mese di dicembre, il mosto fermenta in piccoli
caratelli di legno. Il vino ottenuto matura su quella
che è denominata “madre” per almeno quattro anni.
Il profumo intenso richiama miele, noci ed uva passa.
Classico vino da meditazione, esalta le sue caratteri-
stiche in abbinamento con i cantucci toscani, e con i
formaggi erborinati.

Produced following a tradition of a thousand years,
Vin Santo del Chianti Classico Occhio di Pernice is the
result of a skillful drying procedure involving Sangio-
vese, Trebbiano and Malvasia grapes. After pressing,
which takes place in December, the must ferments in
small wood half-barriques. The wine obtained matu-
res on what is called the “mother” for at least four
years. Its intense aroma brings to mind honey, wal-
nuts, and raisins. A classic meditation wine, its cha-
racteristics are enhanced when served with Tuscan
“cantucci” biscotti and with herbed cheese.

leccino, frantoio e moraiolo, delle quali sa esprimere
eleganza e persistenza. Ottimo come condimento di
carni arrosto, insalate miste e pesce, la sua miglior
fragranza si manifesta a pieno sulla “fettunta”.

Obtained through cold pressing and extraction under
a controlled nitrogen atmosphere, this extra-virgin
olive oil exclusively comes from olives hand-picked in
our olive groves. Made from a blend of the most po-
pular and typical local olive varieties such as leccino,
frantoio and moraiolo, its flavor is elegant and persi-
stent. Excellent as a condiment for roast meats, mixed
salads, and fish, its aroma emerges in all of its glory
when served on “fettunta”, which is another name for
“bruschetta”.

Una casa colonica di oltre 150 anni immersa in una
magnifica tranquillità, tra uliveti e vigneti, in una del-
le più belle posizioni nella zona del Chianti. Gode di
una vista indimenticabile sulla campagna toscana che
si estende da Rignana a San Donato e in lontananza
fino a Tavarnelle. Dotata di quattro camere da letto, la
casa è in grado di accogliere anche gruppi o famiglie
numerose. L’ampio giardino cosparso di vari alberi da
frutto, il piccolo orto e la piscina incantevole offrono
un contatto diretto e appagante con la natura. L’olio
e il vino di nostra produzione viziano anima e corpo.

This 150-year-old farmhouse, surrounded by olive gro-
ves and vineyards in a magnificent, peaceful setting,
is in one of the most beautiful locations of the entire
Chianti region. Its unforgettable view of the Tuscan
countryside extends from Rignana to San Donato, with
Tavarnelle in the distance. The home has four bedro-
oms and can also accommodate large families and
groups. The spacious garden with several types of fru-
it trees, the small vegetable patch and the enchanting
pool offers guests a satisfying opportunity to get in
touch with nature. The oil and wine that we produce
will delight body and soul.
